While female ejaculation is most definitely a thing, what you see mostly in porn is pee. True female ejaculation does not consist of continuous streams that can be projected for many metres.

Why call it ‘squirting’ then, rather than peeing? I could be wrong, but it’s most likely to get past certain laws in certain countries that forbid the depiction of urination. By simply saying it’s not pee, it’s ‘squirt’, these laws are bypassed.
Once upon a time (1970s) peeing was considered a very extreme fetish within pornography, so it’s probably the reason it was included when these sorts of laws were formulated. Nowadays it’s much more mainstream (boom-tish), but perhaps a certain squeamishness still exists, and so ‘squirting’ is a handy euphemism.
It’s interesting that ‘squirting’ as a separate thing has only been part of porn since the early 2000s, and that very early ‘squirting’ scenes showed some sort of copious white discharge from the vagina – obviously of some fake substance that had been put there before shooting (not to be confused with natural secretions). That type of ‘squirting’ didn’t last long – it soon got replaced by short bursts of peeing, then longer bursts. Artists like Cytherea took this to a whole new level, calling to mind the story of the Young Lady of Ealing.
